Q: can this be used to pipe cookie dough (e.g. spritz cookies)?

I've never used cookie dough, so I wouldn't know. I don't know how thick the dough is but if it is thick I wouldn't use this as it could crack the plastic.

Q: What is the length of the barrel the icing goes in without the icing tip?

Q: Can this go in the dishwasher?

I wouldn’t advise it, I am on my third one, and although I’m not certain it was from dishwasher usage, the button you press to pipe cracked in half so I could no longer use the device and the round circle at the top also broke. So I would say stick with hand washing!
