Q: Do you have to have the back piece to install or can you cut a hole and install as how the switch comes?

Cut hole and install or use factory mount if it fits

These do not , but there is a company that makes what I think you are looking for !

Q: I need to run a reverse polarity. As in switching ground on and off. Will this switch function properly if wired in a reverse polarity pattern?

I’m not sure, if the light in the switch is incandescent it’ll work.. if you’re worried about if the switch itself will light up. If it’s led the switch light might not work if polarity is reversed.
