Q: Very happy to have found this extra virgin first-press olive oil from ancient olive trees ~ yet refrigeration did not solidify - what is wrong?

Don't listen to the person who said that said some producers chill it to get rid of the wax. If it does not solidify, it's for one of two reasons: Your fridge is possibly too warm. Olive oil solidifies between 37 and 40 degrees farenheit. if your fridge is at 43 or something, it won't solidify. The other reason it did not solidify is it is not 100% olive oil. I know Keros in their glass bottles is 100% olive oil. I just ordered this tin container of Keros and hope that it also is 100% olive oil.

The 2021-2022 harvest will be available at the end of this month, January 2022. Thank you.

Q: when will the 2020 harvest be available in this size?

Dear Yellow.Jacket, The harvest just finished. They are being packaged and will ship first thing 2021. They will ship and arrive about a month from now. We had the farmers pick an extra early harvest version (all green olives) which will arrive in about a week and will be available on our web site. But those will be smaller bottles.
