How is this product different from just spraying the perfume in your hair?

It is alcohol free, so it would be far is less drying and harsh on hair than the perfume.

Mine just smells like water, is this normal ?

Mine smells delicious. Subtle blend of patchouli and berry. Not too over powering. Have someone else smell it. If it still smells like water send it back. Sometimes our sense of smell can get messed up due to allergy or cold and sometimes age.

Does this smell genuinely like gardenia? Is it strong/cloying? Gardenia is a tough scent to find well done...

As a lover of Gardenias I can say with no hesitation that this genuinely smells like Gardenia. I love it. I will not touch anything but Pacifica. I have smelled a lot of imitations out there including Jovan and what have you. This goes on light and stays on. If there is a light rain, it smells heavenly.
