IM UPSET!!!! upset this knife is so good!!!!
I'm a professional chef. I've been cooking for 20 years. Look most of the time I just need a reliable knife right. But the cost :( the arguments are endless ger over japanese 20 degrees vs 15, high carbon vs stainless, Rockwell rating...... at the end of the day what I need is a knife I can sharpen and is inexpensive enough so that when the guy next to me uses it when my back is turned and hits a bone and chips it or if I drop it and it breaks I don't want to loose sleep over it. So what price range would u say that lends me ?I'm not kidding buying good knives to use in a commercial kitchen is a gamble at best and regardless of price when they brake part of your soul dies just a smidgen:((((((( lolMost people would say 100 bucks for a hundred bucks if I could find the right knife I'm sold but still even today that's a good bit of money man. Now here's the problemYou want a cheep japanese style knife you like the look you like the feel and for the price you settle for a chinese knock off they are hit or miss sometimes you get good steel sometimes not what ever for 50 bucks even if it breaks there's some other kind on Amazon right.I donno who these guys are maybe they are a small forge in Japan trying to break into the market basically the knife is 98% finished i simply doesn't have a finish polish. BTW THIS IS PERFECT 100% in a week my knife would look like this out of the box little hazy not mirror polish maybe a few grind mars from the stone. For a commercial use that's just the reality. And you kniw what this knife is still handsome. In a major way it's like a cacophony of things a blacksmith might use to keep the msrp down. The finish and the final work with the edge geometry and slitly thicker spine. It's a work horse and let me tell you as a chef when you hear this blade SING!! For the first time you too will crack a creepy smile LOLThat's the thing right it's a real japanese blade the differance from a Chinese or German blade is something many could debate for days but for me how I check a blade is by running on a sharpening steel LISTEN TO THE SOUND songs are nice but a masterpiece you can feel in your bones. Buy one only then will you know what I mean.

Well-balanced and super sharp!
I really love this knife, it is *very* sharp and fits well in my hand. I haven't tried shaving with it but I'll bet it would do a good job if I did. If you want to try that, I advise caution lest you slice off a piece of your ear!The blade makes easy work of vegetables and meats but a word of caution: don't try to chop bones or anything hard with this or you'll risk damaging the blade. Wash it and dry it well immediately after use to keep it in top condition and you may occasionally need to get this professionally sharpened or use the proper tools to do it yourself.

sharp, balanced, good looks
Out of the box feels comfortable in the hand, very sharp, well balanced. this is a knife for every day use. The forged look adds to the appeal of this implement. A great addition to your kitchen tools.

Impressive Knife
I got this as a prep knife for my wife, (we eat a lot of fruit). So far she has been delighted. In fact so much so that she has started using it for almost all meal prep, again with great results. Generally, slicing requires just a slight downward pressure, augmented by a little carving motion for higher density foods and meat..I cannot comment yet, on the durability and resilience of the blade and its cutting edge. I cannot comment yet say that, at least so far for us, the blade was received, and still is, extremely sharpe.

Terrible handle
I thought i'd give this knife a shot as the price was good. So the knife, its box, the listing all say "Japan" or "Japanese". Although I never saw "made in Japan" and, as others have said, I don't believe it is. I think it is simply a mass produced Chinese knife. But i'd be ok with that if it was a good knife. The packaging is very nice. Suitable for gift giving. The blade is great. Very sharp and cuts awesome out of the box. Although the polish on the cutting edge is crude and one hint of mass production. But, as others have said, the handle is TERRIBLE. The scales (wooden parts of the handle) seem too small. The tang (metal part of the blade that continues into the handle) and the rivets/pings (round metal things that hold the handle together) stick out. They should be flush and smooth with the scales but they are not and you can feel the rough and sharp edges on them. This makes the knife uncomfortable to hold and potentially dangerous. If the handle was better it would be worth giving a try. And i thought maybe the one I received was an exception. So I returned it for another and it had the exact same problem (although the box for the second one was torn, beaten and battered). So look elsewhere for your knife purchase.
