BEST KNIFE FOR USE WITH Bread Slicer Cutting Guide Board
I bought this knife to use with a bamboo wood foldable bread slicer. I didn't realise how hard it would be to find a knife long enough to be able to use with it. My previous bread knife, a pretty much standard length of 7 to 8 inches was about an inch too short to allow it to go through both rails on the bamboo bread slicer. The blade length of this Mercer is roughly 12 inches long . The blade is the perfect length needed to use with the bread slicer.. It cuts perfectly without squashing the bread. I can easily use the knife without the slicer as its so sharp and cuts perfectly straight even when cutting thin slices. I have only used it on bread as that's what I bought it for but I'm sure it would be perfect for carving meat etc if needed. The blade is really nice and thick too, it just feels excellent quality and I'm so happy that I bought it. I paid less than £18 and think this is fantastic value for such an excellent knife. Highly recommended.

Sharp! Long and excellent
Bought this after a debacle with a shorter knife and the so-called SimpleSlice device. This knife is sharp. Really sharp. It cuts through bread just like a knife should an I was always taught. You move it back and forth and it does the cutting, no pressure needed. Let the blade do all the work. In fact, its so good its rediculously easy to use. I do not put mine in the dishwasher by the way, I'm told this is bad for sharp knives. It's easy to clean though, usually a quick rinse or at worse (when I mess up my bread making and get a doughy sticky mess) a gentle scrub with the brush does the trick.

Glides through bread but Amazon won't let me purchase another one
Update: As per below we want to purchase another as a Christmas gift, but unfortunately cannot get past the security. I have added my DOB etc but comes up with Age verification is not available at this time. I think the seller should be aware, it may be happening to other customers. Best knife for cutting bread, purchased in 2020 and although its now not as good as when we first purchased it, it's still going strong. We may purchase a second one as its struggling a bit with soda bread. Can also very used to cut up meat. Price wise I think its a good buy

Long and sharp, ideal for home baked bread - but no sheath
Long enough to use on any loaf and bread slicing contraption you may have (see photos). We had a very nice bread slicing knife but it was just too short to use on our loaves and the bamboo bread slicer (also purchased from Amazon). Easy to hold, very sharp BUT I'm removing a star as there was no knife guard (sheath) included and I've now had to spend another fiver getting the matching guard before I slice my fingers as I grope for this knife in the cutlery drawer. That little niggle aside, this is one excellent knife, especially for home baking as it cuts even the softest, warmest loaf without any crushing or compression of the bread at all.

Excellent sharp knife.
Very, very sharp so be careful. Excellent for slicing bread, which is the reason for me buying it. A good, long blade. Only down side is that it does not come with a protective sleeve. No worries though, l made one from the hard cardboard envelope it came in.

A great knife, for large, crusty sourdough loaves.
I’ve been baking large sourdough loaves for several months now. Our existing bread knife is a few centimetres too short than ideal and it’s a struggle to slice the crusty bread. I even switched from a round cast iron pot to an oval one to make the loaves longer and narrower but still struggled to slice with the existing bread knife. So, I looked for a new, longer knife. The first one, although on paper 5cm longer, in practice, because of the handle design, was only a couple of centimetres longer, not much better, and I returned it. Then I spotted this 12” Excalibur of a knife, definitely long enough. My sourdoughs, even the really big round ones, are now much easier to cut, the blade is very long, quite stiff and sharp.

Long, sharp and great value
Purchased for the 12” blade to cut the larger loaf of bread - and it does so superbly, without tearing even fresh bread. The handle is well shaped and comfortable to hold and the blade is exceptionally sharp - be very careful when handling this knife! I therefore strongly recommend a blade guard for storage. Although this is a right handed knife, the bevel isn’t so pronounced that the cut is skewed when used left handed. I recommend this knife, it is great value for money.

Sharp!!
Love this blade, it cuts with no problem at all. Be aware this is a very sharp blade as I found out the first time I used it, nothing serious, just knick but proved how sharp it is. I use it daily now on my cakes, it's never blunted at all, it fits very well into the guides I use also, recommended to cooks and chefs alike.

Es el cuchillo perfecto para cortar pan, bollos o verduras blandas de piel dura como el tomate. ¿Y por qué es tan bueno? ¿Qué lo hace diferente del resto? Fundamentalmente el tipo de arcos de sierra, cuantos menos tenga y menos pronunciados mejor corta. El mango es ergonomico y no se escapa de las manos. Eso si, mi modelo parece mas una espada que un cuchillo, seguro que en un armario normal no cabe. Aún así, si quieres la mejor calidad y funcionalidad este es tu cuchillo, ademas no es nada caro.

Let me start with this, I fully recognize this is designed for cake. I think it would do a good job of shaping and cutting cake and think it would do a good job at this. I specifically purchased this to accompany my 12 in Mercer chef to fill the gaps that the chef just didn’t do as well. This thing fits the bill! For the price this knife is all I could ever ask for. The length is perfect for slicing perfect brisket slices and is very sharp! Similar knives that aren’t half as well made sell for 4-5x’s the amount. I would recommend this knife to anyone.

I had the 10 inch Mercer wavy edge bread knife for several years, but needed a long blade for the bread slicing guide that I bought for consistency in my artisan sourdough bread slices. This is the perfect length for the job. Plus the wavy edge Mercer knife is the best knife I have ever used to slice artisan sourdough. I am so pleased with the knife and know that I will get years of use from it. I do take extra care with my knives in washing and caring for them.
