Super sharp, so far a very good brisket knife. Holds edge, good weight, rigid, fits hand well for good control. Handel is smooth so be careful as it can slip in your hand when cutting a juicy cut or trimming. NOT dishwasher safe ONLY handwash. Great quality, overall well made, great value for money- comparable to a chefs version at much much more.

Bought this for my son who lives to barbeque and smoke brisket, etc. I could not wait for him to try it ... and ... he had nothing but praise for how sharp it was, how the angle of the blade made it perfect for cutting meat off the bone, the handel was very comfortable and made to fit the hand, and the size was perfect making the weight easy to handle. This is a great carving knife and a real value for the price.

I’ve been using a 10” dexter breaking knife and wanted just a little bit longer for butchering large slabs of beef and large fish. And the only complaint I have would be the price because after I purchased it I saw much cheaper prices for the same knife. The quality is very impressive and cuts are superb. I gave this beautiful carving knife as a gift. They loved it! It has a nice sharp blade and has a good length. Although they have not used it yet, it seems like it will be easy to use. Japanese knives, I find are very high quality. I would highly recommend this knife.

Great feel and balance. The exceptionally sharp super thin blade makes for easy slicing of roasts. Blade is a bit long but also works well on tomatoes, even very ripe ones. Happy with purchase.
