Pretty much, truffles loose around 90% of their flavor after 10-15 days being out of the ground. Truffle 100% do not keep when brined or pickled, they don't even taste remotely the same as fresh truffles. The chemical that makes truffles taste the way they do fresh which gives them their fragrance literally completely disappears after two weeks. That's why you have an imitation flavor in truffle salts and NOT real truffles because it wouldn't taste like anything.
