Meatier size
The sea bass fillets were larger than the average fresh ones. They were also more ‘meaty’ than the smaller ones. It is also good that they had the skin on still.I season them, lightly dust them with flour, cook both sides in shallow oil, discard the oil, add butter, fennel seeds and a drop of dry sherry for a couple of minutes before serving.
