Great product for sourdough rye bread

Great stuff. I prefer the Dry Malt Extract.
This company and their malt seem to be good. I prefer the Dry Malt Extract powder impress than the Liquid Malt Powder. The dry is less messy and might stay good longer — it won’t grow mold on it.For my purposes (making malted milk and smoothies), the jar of LME syrup was messier and less convenient. It’s like honey or molasses, only thicker. You don’t want to try to pour it right out of the jar, but it clings to any utensil you might stick into it, which would waste a lot of syrup.Another reviewer recommended putting it into a squeeze bottle. I was using a butter knife or spoon to spoon it out, then a second knife or spoon to scrape off the first one.Also it didn’t completely dissolve in cool liquid with a hand blender. Trying to clean it up also takes a few tries, for the same reason.Another reviewer mentioned the 2021 date on the bottom. Mine had the same thing, but I think it might be when it was made, not when it expires. It didn’t say expiration date anywhere.My LME syrup grew mold within 3 months. It might have been my fault, not sure. I dipped a plastic butter knife into the malt, stirred it in a half cup of boiling water to dissolve it, then I dipped the knife back into the malt jar with a few droplets of warm water on it. I would have thought the few droplets of hot water wouldn’t have been an issue, but who knows.I was trying to make malted shakes with less carb, but I don’t know if this really reduces the carb. Malt extract is I believe 75% carb or more, mostly sugars created by the malt process. I hoped that you could use less malt if the flavor is more concentrated, but I don’t know if that’s true or not.Also, a part of the flavor of malted milk is from the powdered milk, which is also mostly sugar and carb. Using malt without milk powder (to avoid the carbs) tastes similar to malted milk, but not 100% identical.

It adds color and flavor, just like in beer. Makes better bread.

Expired product *Warning*
Expired. I received this approx March 12. Wasted my time and other ingredients before I noticed the date. On the positive side, cudos to Amazon for stating they will send me a replacement. Let's just hope this next one will not be expired.**Warning: 3/14/23 Received replacement and the item had the same expired expiration date (over 7 months old). Since Amazon sent a replacement, they will no longer allow for a new replacement or refund. There is also no way to directly contact the Briess Company. The website on the container is not valid and any attempt to contact them leads to a dead end. Maybe the company went out of business and Amazon is clearing out whatever stock they have left?
