- Mature or fermented fruits lose their properties and acquire unpleasant taste and smell We have determined that green or immature fruits have a higher concentration of the active ingredient, but also a large proportion of folate, which is lost when the fruits are fully ripe. That is why we do NOT process ripe or fermented fruits in an artisanal way.
