Q: What is the ash percentage?

Crude fiber is 6%. There is no mention of ash % on the back of the label.

Q: It is my understanding that copper is toxic to shrimp and most invertebrates. Why is it an ingredient in a food designed for shrimp?

Copper can be lethal to shrimp at roughly 0.3ppm but a small amount is needed for good health, in particular in their blood. The amount of copper in food is not luckily concerning! If anything I'd watch out for copper in aquatic plant fertilizers and aquarium medications for fish
