Samp for making Samp & Beans
Samp has got to be one of the best and tastiest foods around. It has to be cooked correctly and the only way I have ever eaten it was curried or with beans (samp&beans). I remember it as a staple food eaten by many Xhosa people when we were growing up in Port Elizabeth in South Africa. It is high in protein and also fibre. This bag is just plastic and has the information written on the plastic bag.Instructions for cooking it are :Soak the samp for 12 hours (overnight) and then drain, bring to boil with a little salt in the water and stir often. Turn down the heat and simmer for 90 minutes until cooked. Fluff with a fork before serving. (optional to add butter).I cook it with the beans after both have been soaked overnight. It is best to cook with tomatoes, onions, potatoes and meat on the bone such as lamb or oxtail. I usually add a tablespoon of Rajah curry powder. (best to add the potatoes towards the end so they don't disintegrate).I am really happy that it is readily available on Amazon but I bought mine at the local South African store in my area.I added photographs for your convenience.
