Thin flexible sharp knife for fruit carving or deboning proteins.
Sharpest knife ive ever gotten out of a box. It has a fine thin tip made for getting into places when boning out chicken or carving designs into fruit. It is slightly flexible. Its designed reminds me of a Japanese style honesuki. The only downside is a smaller handle....but I have very large hands, which leads me to believe you can use a pen hold for carving small details. Its a great knife.

Great little tools for fine carving/cutting work on produce
These aren't premium: not the best steel or the most carefully-crafted edge, but they are well-constructed and they do arrive very sharp. I use them mostly to cut around the stems of bell peppers or to dig out the end core of onions.

Handy utility knife with a very sharp pointed tip
This knife feels light in the hand, and the grip is textured. The pointed tip is super-sharp and useful for coring and slicing tomatoes and other fruits and vegetables. The German carbon steel blade has a small amount of flex. Mercer knives are a great value.

The handle es thin and cheap
I love the brand and this knife is amazing but I didnt like the handle at all, super lightweight and super thin. You can easily cut yourself. I felt odd having a knife front this brand that looked so cheap. The knife by itself, is amazing.

Want to start learning how to carve fruits but don't want to drop a hundred dollars on a more niche set? here you go! you can do everything you need to do with these two and get great results! no need to look any further, here it is! Cheap and gets the job done perfectly well. I did drop one of them accidentally from about 4ft and the tip bent, but that's my fault. These knives are supposed to be thin and flexible, so don't drop it! They came super sharp out of the box and retain their edge fairly long with good care. Buy this one!

It is super tiny. I am not sure if you can call it a "carving knife" if you are not carving an ant or something like that. I can't use it as a paring knife either, because of its triangle geometry, it would be a thumb-piercer. I still enjoy the knife though, sometimes using it as a steak knife. It is sharp and pointy, what can go wrong? Be sure you check the dimensions well before you buy it.
