Good quality knife
This knife is of very good quality and extremely sharp out of the box. Works exceptionally well with an ibérico ham. Very well built and very good looking design. I feel this knife has very good value for the cost. I should say beware, and if cutting stuff unguarded, make sure to wear protection (such as steel gloves). Have had a couple accidents with it.

Excellent blade for the price
For the price, this a top notch blade. It’s comparable to knives 3 to 4 times as costly. Out of the box it was paper slicing sharp, the fit and finish is tip top and mother handle is ergonomically comfortable. The fit and finish is first rate and it’s shaped like a Spanish slicer or a very long filet knife. I own a wide variety of knives (see photo) that are mostly from Japan. I buy gnarly looking rusty/used Japanese blades directly from Japan, refinish them, sharpen them and make custom handles. I rarely buy off the shelf blades because they are either too expensive or poorly made. I know this Amazon blade is not from a famous blade-smith in Japan (most likely from China) but it’s still very good quality. After using this knife multiple times daily for weeks on fish and poultry, I sharpened it with a flat Dickoron steel and it took an edge quickly. From a fussy, experienced knife builder, for the price, this is an excellent blade.

Beautiful, Razor-Sharp, and Ready for Anything
We have an extensive collection of knives we use constantly in our kitchen, so I hesitated to add this knife to the lineup. But I am so glad we decided to go for it. This carving knife is an absolute standout and compares very favorably to some of the much more expensive German and Japanese knives in our kitchen lineup. Right out of the box, it impressed us with its elegant design—the dark wood handle has a rich, classic look, and the long blade really works wonders when slicing meat or fish. Overall the knife exudes a clean, professional feel and is a pleasure to use. It comes in a handsome gift box with a protective sheath, making it a great option for gifting (though we’re keeping ours!). As far as performance, it's seriously sharp right out of the box. It slices cleanly through thick roasts, smoked meats, and even large cuts of fish with zero hesitation. The weight and balance make it comfortable to handle, and the blade glides like it’s doing all the work. It really does feel like a much more expensive knife. This knife is a welcome addition to our already extensive kitchen toolset—it's both beautiful and functional. Highly recommend for anyone who takes their meat carving seriously or just wants a great-looking knife that gets the job done right.

Nice if you get it at a good price.
The listing photos are an excellent example of the product I received. The fit and finish is very good, and the blade is razor sharp. I was able to actually shave the back of my hand with it. The craftsmanship is quite excellent. However, the listed value of this product for the purposes of my vine review is 70$ Right now it's selling for about 40$. My review is based on the stated value of the vine item. I would certainly not pay 70$ for this knife. 40$ is not a bad price. I removed 1 star for this reason.
