Q: How long will it take to reheat like chicken rice and veggies ?

I have used this to heat up chile and rice straight from the can and it takes approximately 10 min. But be careful, the 12 volt plug will melt if you leave it in for an extended period of time. i wouldn't recommend leaving it plugged in for more than 20 min.

Q: Can I make hot water with the warmer to make coffee or something?

It heats to 300 so could be warm enough for water.

Q: Can i use a baking pan instead of alumminum pan?

I don’t see why not, but I use the aluminum pan because it is more convenient.

Q: Our meal prep is usually frozen and in a reusable plastic container if I get the aluminum pans will the food still cook in about 30 mins?

It may not be ready in 30 mins. If you take it out to thaw then cook maybe. But that’s something you may just need to mess around with to dial it in for your meals. It may just take a bit longer for frozen foods to cook.
