Culinary Institute of America Masters Collection Nonstick 12-Cup Muffin Pan

I got this because it didn’t have the rolled edges where water gets trapped and rusts, but each cup ha a groove on top and a roll underneath. Heavy weight and food doesn’t stick though.

After spending nearly $800 on boutique cupcakes for my wedding two and a half years ago, I added making professional cupcakes to the list of culinary skills I wanted to master. I searched for the heaviest weight pan I could find to avoid burning and to facilitate even baking. This is it! I now can make professional looking cupcakes that my friends, famiily, and colleagues say taste better than the ones from the boutique stores (You know their names!). You need a super-heavy pan to create moist cupcakes, and this is it. I just ordered a third one today so I can make three dozen at a time. I also ordered another pan from Amazon when they were out of this one and promptly sent it back, as it was a featherweight compared to this. I received this muffin pan for a gift. It's a nice pan in many ways but I would have never purchased it myself. First of all, the price is high. It's very heavy which has pros and cons...won't warp like super light-weight pans but when filled with batter it is really heavy. The ends are extended to provide handles but because of this it can only go in a standard oven length-wise. If you put it in side-by-side with another pan, it is too long and the door will not close. Lastly, it is only useful for muffins as the cups are not large enough to accommodate paper cupcake holders. The paper cups fold in and do not make nice round cupcakes. The positive is that the non-stick coating is nice and it produces beautiful muffins. All in all it's not a multipurpose pan, it's too heavy for my liking, it's too expensive and it takes up too much space in the oven...not a winner in my book. I suggest looking elsewhere.
