From the photo I can not see the metal shielding passthrough tab, is it just not visible in photo?

Which tab are you referring to? Cat five cat six locks in with a tab on the cat five cat six cable.

What size screw head works good with these?

The panel that I installed this in had cover plates over the blank slot that I used. I reused the existing screws. I don't remember if they were 4-40 or 6-32.

Does it support a PoE connection?

It should have no problem with POE. I don’t know if I’ve ever seen a RJ45 jack that couldn’t handle it. The connections are very simple, and almost certainly more robust than the wires inside your cable anyway. If you have an older or cheaper POE injector, you might consider marking it as a POE supplied jack, in case someone plugs a non-POE device into it. Newer/better injectors can usually tell if it’s a POE device, and respond accordingly.
