Love this slicer, great for meat!
I alsolutely love this slicer! As with all Mercer products I've bought, it is a quality knife at exceptional value. The handle is very comfortable and feels solidly attached. Their steel always strikes a good balance imo, it comes sharp, and it holds a sharp edge, but if you're good with your crock sticks or stones you can get it much sharper and it takes an edge fairly easily.I love the design of this specific knife for slicing meat. The blade is long, narrow, and thin, making it great for slicing up any large cut of meat, like tri tip, turkey breast, or pork belly, and I use it to cut up ribs, too. It'll slice through very tender ribs with no effort and without removing the meat, and the narrow design makes it easy to follow the curve of the rib bone.I've tried a lot of knives over the years, both less and much more expensive, and most of the ones I've kept are Mercer. There's a reason they're still a big name in the culinary school and foodservice industry- excellent knives that are sharp, easy to clean, and comfortable at a great value! Impressive Blade
Right out of the box, the knife feels high quality. It has a solid weight without being too heavy, looks sleek and is extremely sharp. The length is perfect for slicing through larger chunks of meat without much back and forth motion. It slices through everything smoothly, from thick cuts of beef to delicate pieces of deli meats and even fruits and vegetables . I also noticed that it doesn’t tear or shred softer meats, so you get clean uniform slices every time. Even after multiple uses, the blade hasn’t dulled, which is impressive.

One slight problem
First off the knife is sharp out of the package. It cuts everything i tried it on easily. My hand did not slip on the grip in use. But... after one use the blade stained in many places. It almost looks like a rust spots but there is no type of hole or surface crack detectable for it to be rust. It does not scrub off or reduce with cleaning. Knife works great but it should not be all stained up after 1 use and a hand wash and dry

Just like a rifle…
Don’t get turned off by the rifle comparison. What I’m saying is like a 22” rifle is incredibly more accurate than a 2 1/2 inch barrel on a pistol. It’s all in the barrel or in this case the blade length. The long blade is not just for a huge clump of beef. It is for accuracy and precision. If you want to cut thin, accurate, pretty or precise slices of beef, pork, chicken or fish then this is the only tool for you. It is incredibly sharp and makes slicing meat a pleasure. The price, usefulness, quality and durability of this knife makes it a no brainer. Find out what you’ve been missing.

Great purchase!
Wow!! What a difference cutting my roast with this knife made!! I had never had a slicer knife before, I used to just use my old chef's knife for everything, and I struggled. Also, I have arthritis, so my hands, wrists, and elbows hurt. This Xmas, I used this awesome slicer to cut my prime rib roast and the ham! It cut like butter! I didn't even feel it! It cut precisely and easily without any effort on my part! It's like a new era for me. I'm getting all brand-new knives from Mercer. It makes a big difference in one's life, especially if one cooks every day, like me.

Works Great, SHARP
I needed a quality knife that is sharp, holds the edge for a while and wasn't overly expensive. I found everything that I need right here. I have used to cut all kinds of meat for my smoker and grill and it works great on everything I have cut up so far. Easy to sharpen and it holds an edge for a long time. It doesn't get too slippery when I am getting greasy when cutting up a brisket, it is easy to maintain control of it. I am able to make very thin cuts with this knife and it is easy to see the cuts as I make them. Some kitchen knives are too tall and they are a hindrance when cutting up your food, I have to lean forward or move the meat to my left to see exactly what I am doing. So far no issues with this knife, quality materials, good ergonomics, no slip and it retains an edge. Also, easy to sharpen.
