A 'Must have it" book for your kitchen.
I always felt that I had a pretty complete pantry, but after moving into a condo with limited space in my pantry, I needed a book just like this. It definitely a "must have" for every kitchen.

Not for people that make easy meals
The book is great in that it offers a fair amount of alternative options. Unfortunately for me, I don't regularly keep some of the things that you can substitute. Some of the suggested substitutions are off the wall too, and you need random ingredients that you probably don't have sitting around the house. I was hoping for a garlic powder and onion powder substitution since those are two things I can't cook with right now due to my daughter's dietary restrictions. No subs for those. There was a time that I ran out of cumin, and had to scratch dinner plans. The sub for cumin in this book is caraway and anise or fennel seed. I don't have a use for either of those three in any of the recipes I make because everything I make is pretty simple, so the sub doesn't work for me. There are some nice things though, so I won't completely knock the book. There is a recipe for ketchup and several variations for seasoned salt that I might try. I think this book would be perfect for an experienced cook, someone that loves experimenting with new recipes, and thus will likely have a lot more spices and a vast array of different perishable foods on hand. I am not that person. I think most of these substitutions, and even more, can be found with a quick google search. If you don't like to do a quick google search, then this book might work for you. Maybe. I wish I had saved my $10.

Brilliant addition to your cookbook shelf
This is a must-have addition to your cookbooks. It's saved lots of dinners for me as my cooking is more ambitious than the spices I keep on hand. Who knew you can make fake sweet paprika by combining tumeric with a dash of red pepper? I just bought a copy as a graduation present for a guy who just started cooking and another for my niece who's getting married this summer. Also love the measuring equivalents in the back as well as tips on how to rescue cooking mistakes.

A GREAT BOOK
I am a very experienced home cook. But still there are times when I forget to pick-up an ingredient. So this book is handy. It is rather extensive in how to substitute without altering a recipe's taste. I appreciate it. I have also recommended this book to neophyte cooks. Thanks.

Can’t do without this book in my kitchen.
Some substitutions I never thought of. The herb section is particularly useful. On reviewer didn’t like the book saying “egg yolk is not a substitute for egg”. If you have a recipe that calls for egg whites, such as angel food cake or macaroons, you’re going to have yolks left over so it’s good to know what to add to them to make them a whole egg for another recipe.
