There are a couple of egg substitute options. The best that I have tried is 1/4 c unsweetened applesauce for 1 egg. A word of warning, eggs do make a better cake. The applesauce can make it a little grainier and crumbly.

If digestion is normal, you can feed 1 regular cupcake or 2-3 mini cupcakes per day.
