Yummy! Better than I expected!
The noodle makes a great substitute for standard wheat pasta. I think the large soup noodle is the best. Although the texture is not quite the same as standard wheat pasta, it is really quite good when mixed with a sauce or topping. I made fettuccine alfredo with the Skinny Pasta and it was very satisfying! It was filling, looked good, and smelled good. I made it four times! If you want to enjoy a pasta dish but lower your calorie and carbohydrate intake, I recommend Skinny Pasta. I WILL be buying it again!

Could be a problem
We are new to a Gluten Free diet, so we were excited to find this possible substitute. Buyer beware! We read reviews before purchase, so we were on the look out for questionable bags. Ordered a 6 pack of angel hair and a 6 pack of Fettuccini. Made it through 2 bags of the Angel hair before finding a questionable bag, dumped that. Fast forward a few weeks, made some Fettuccine Alfredo with 2 bags, out of bag looked great, threw it in with my warm sauce and served it up. Tasted off, not like the Angel Hair, and it was very rubbery. Funny thing is after going back through our food journals, we noticed when we ate the Angel Hair, we both experienced intestinal discomfort and all the things with that afterwards. After the dinner of fettuccine, we were both up in the middle of the night with problems. Did some more investigating, and found that the Konjac root products can be highly indigestible for certain individuals. Found that if you eat a lot of it, there can be intestinal blockages. Not sure how to process all this. Seems a shame to waste the rest of this, but we most definitely do not want to go through that again. I would love to get in touch with the company, but their website does not have a customer service number or email, only contacts for orders and shipments. All I can say is do your research and maybe find a single bag in the store and try it out before you sub out.

Ease and neutral flavor with low carbs
Excellent choice for low carb conscience diets. Time saving ease and neutral flavor for additional ingredients to dominate the dish.

Nice product.
Love this. I use it in place of rice when i make stuffed peppers, soup, etc. (I can't eat rice.) It works well. Good texture. Quick. Doesn't get mushy or dissolve in soup. Truly low carb.

***USE Unsweetened almond or cashew milk to Cook!!!
The trick is low calorie *Unsweetened coconut milk or cashew milk* (25-30 calories per 1 cup)! Forget a bunch of other high calorie sauces/dressings, which just make it taste artificial & negates the low calorie appeal…the low cal milk makes the taste, texture, & appearance exactly like buttery pasta…I’ve cooked these for my parents and my own family numerous times this way and they love them! I heat my pan up between medium/hot…spray a bit of PAM. Drain & dry the noodles (I use 3 bags at a time - 27 calories total) & start w/ some seasonings (onion butter seasonings & dash of salt). I incrementally pour in my low calorie cashew milk at 1/4 cup at a time, stir, & once the milk evaporates, I repeat the process until I use a total of 1 cup for 3 bags of noodles. I lower the temp down a bit about halfway through…it’s usually about 15 mins on the pan to get them soft & buttery like real pasta. I’m stirring the majority of the time. Near the end of the process, I sprinkle on some low fat feta and stir until evenly distributed. Makes about 6 servings at a grand total of 20 calories per serving. Alternatively, I do the same process if I want Mac & cheese, but instead of feta like I do for above recipe, I use a 0 calorie Mac&cheese seasoning - believe it’s technically a popcorn topper, but works just as well for this) & sprinkle on a bit of fat free skim shredded cheddar cheese (a little less than 1/4 cup at 40 calories distributed over 6 servings). Literally tastes like velveeta for about 10 calories per serving. If you want an even more buttery taste, use a couple of drops of butter extract for each of these recipes. You will never miss the real stuff again once you cook these bad boys the right way!

I was pretty brutal in my initial review
As the title stated, I was brutal in my initial review and glad to correct that here. This is a GOOD product, but it is not an exact apples-to-apples substitute for normal pasta. There is some concession, but that it not a bad thing. Texture is similar. There is a slight smell, but you do need to rinse from the package BFEORE cooking. Taste is different, but a great sauce makes up for that. The WIN here is that carbs are relatively non existent I do, highly, recommend that you follow portion sizes to the letter especially when first trying this product. This products fills you up quickly and a full package might make you uncomfortable (and yes, I speak from experience here. I was hungry as I skipped Breakfast and Lunch that day. Lesson learned).
