This book is a fantastic all-encompassing look into the world of becoming a chef and cook. They dive deep examining the choice of going to Culinary Schools vs apprenticeship. What schools are good, extensive advice on job interviewing, etc. if you are even remotely thinking of going into the food business, this book is required reading. Lots of history, excellent advice from today’s top chefs, lots of informative side bars. Just a very thoroughly put together text that is a fast and engrossing read. I highly recommend it.

Excellent Variety and Perspective
I am a restaurant owner and this is the fifth copy of this book I've ordered because I love it so much that I keep giving my copy to people. Each time I pick it up something new speaks to me. I love that the contributing chefs are both classically trained and self-taught. It offers realism of the industry and love of the art. It is fun and serious, inspiring and pragmatic and a great addition to any kitchen or library.
