I use it for Vinegar. Should be OK for apple juice.

Can this sprayer handle hot water?

I don't see why not, but I don't know for sure. Can't imagine why it wouldn't. Aluminum with sturdy plastic--unless it's a rolling boil, the water should be find. Would the heat cuase air expanding and blow off the spray top? Don't know.
