I had been wanting to replace my old one with a spilt wooden handle for years and this one is the perfect replacement!!! It is sturdy and sharp and will be very durable. Price was okay, too.

This review is for ZWILLING Flexible Boning Knife, 5.5-inch, Black/Stainless Steel. It's been a super long time since I have had a boning knife, but there are many times that come up where one would be helpful. This was the top rated one from one of the cooking shows I like, so I decided to order it. This is the first flexible boning knife that I have used. This knife is amazing. I could not believe how good and useful this knife is. The first thing I used it one was a bone-in pork roast, which tend to be tedious to cut. I was able to easily use this knife to cut the bone out and away from the meat without leaving any meat on the bone. This alone makes this knife worth it. But I have used it many times since. This is one of the most useful knives I own. I highly recommend this knife to anyone who cooks.

I trust the Americas Test Kitchens reviews and this knife was their top pick for a boning knife. They tested for handle comfort and just the right amount of flex for bonune fish and cleaning all of the meat from a poultry carcass. The knife meets all of those qualities. The construction is outstanding. Yes, you can buy a cheaper knife, but this will last for decades when taken care of properly.
