Can it handle sweet potatoes being cut into fries?

You should have the best crunchy golden fluffy inside fries with the double fry method 4 fry ovens toss with a little oil herbs fresh are best added when done they'll burn b4 when half done shake n continue till done and as dark as you like watching carefully Toss with fresh chopped herbs fresh ground black ⚫ pepper n salt serve immediately

How long of a potato can you cut in this thing?

With the cutter fully opened it measures approx. 6 1/2" from back of the cutting blade to front of the pusher block..

Is this easily set up and used with 1 hand, like for a stroke victim with 1 strong arm/hand??

It works really well the suction cups hold it to a surface so you can easily use it with one hand, but it still takes some force to push the potato thru..But then the trick is to remove it. The suctions cups really really hold it down, its tough with 2 hands to get it off the counter due to the suction.

how long of potato and how round

The product will take anything up to the diameter of the cutter area, approximately 3.5" wide. You can go up to 5-6" long, which is the opening of the potato resting area with the handle all the way up. Keep Physics in mind if you're after loooong fries...the higher the handle, the more effort needed to push the potato through the cutter -- It works great! Made 4 lbs of fries on Christmas Day, yummy!!
