It could hold phone straight up, but may not be very secure.

Yes, very easy to open. Put on a flat surface. Hold in position and gently pull the two legs at the front upwards and stop when you get to the height you want. It may seem a bit stiff to start with but it will work if you are gentle but firm.

Would this suit an s20 ultra

I use it with an iPhone 12 Pro Max and it works OK with that. I think the S20 Ultra is a similar size so should be fine.
