The way I understand it is, it's made from a fermented process but doesn't actually contain any corn or corn products. The body doesn't metabolize it, which makes it a great alternative to sugar alcohols and other sweeteners that can sometimes cause stomach upset. There are some great articles online that explain it much better than I can. Wholesome Yum has a good article online that outlines the different sweeteners that I found very informative.
