Compared to several other brands these seem to have better edge retention. Handle fills the hand nicely reducing fatigue on long days. The prices are going up everywhere and these remain a real value at current prices. Sharpening is easy enough, but you’ll notice the steel is a little harder or tougher. The feel on the whet stone is different. I own or have worked with most of the NSF knives and this is the best for the $. Notice the alloy is the same as the expensive German knives X50 CrMo V15. Victorinox has been a favorite of mine for years and they are 3X the price or more. Get these, your line cooks will love them.

I really love my new knife. It seems just as sharp as if not sharper than my RADA knives though the RADA look better. I would recommend either brand for a good cheap knife. They're not professional quality knives, but much cheaper than professional knives, and they outperform similarly priced knives.

Great quality and sharp out of the box. No problems at all. It’ll be subjective if you like the handle and how it “swings”. It’s a big knife and you should be careful getting used to it.

All though this knife is inexpensive it’s our go to knife in our kitchen. Holds an edge, durable, light and easy to handle better then or equal to most expensive blades
