Great anchovies! The taste is very supple and the quality of the product is always the same. I highly recommend!

Best Anchovies you can get
I love Anchovies, I eat them as is and don't just cook with them. I've tried all types and brands and these are by far best Anchovies you can get. The flavor is more mild, and less fishy. I happen to like the fishy flavor to be honest I like but these also have the perfect texture, not too mushy but not too firm or waxy like some others I have tried. The salt is also on point and are the least salty I have had. The only downside is the price, these as far as flavor and texture are the best but are also by far the most expensive. I have ordered these several times and unfortunately the last order one of the 3 jars had leaked and are not edible and at $14 a jar is disappointing to say the least especially because you can't return them or get a refund. That being said I will definitely order more of these. Side note, be careful where you buy these from. There are several types from this brand and they all look similar, these are the higher quality anchovies.

Luxurious
Anchovies are anchovies. What separates these from the grocery store varieties is texture--soft, creamy, and buttery. The flavor profile is what you'd expect--salty (you could use briney given the context)--aggressive, and in your face. Use them as is, in small portions. I'm a simple person, and these worked for me: tortilla pizza--put them on after it's out of the oven and cooling; tapenade: on the surface of your choice, and add a few capers; bareback: saltines work with some fresh mozz, and if you happen to have them, cherry tomatoes and basil. I have no doubt that Cento, etc. would work for any of these preparations I've offered, these anchovies would make the tastings a moment.

Premium Price, Questionable Product
I was really disappointed with this jar of Ortiz anchovies. For $16, I expected high-quality fillets, but what I received was a jar full of mush. The anchovies were completely broken down, and the jar was covered in oil when it arrived. The smell wasn’t right either — not like fresh olive oil, but more like old fryer grease. The lid didn’t make a popping sound when opened, and while I’m not sure if that’s standard for this jar type, the combination of the off smell, exterior oiliness, and mushy texture made me worry the seal had failed and the contents were spoiled.

Umami in a jar
I ordered these on the recommendation of food writer Charlotte Druckman. I love anchovies but I'd been living off the kind at my local grocery store until she sang the praises of these babies. At first I balked at the price- I can get them for a dollar locally, and they were $7 on Amazon. I got an alert that the price had gone down to $3 a jar, and so I made my move, ordering several. And OH. My. God. So good, so worth the prize. These are much meatier, with a stronger hit of umami and less of a salt taste, than the anchovies I'm used to. You could actually eat these straight out of the jar if you wanted. In fact, my preferred way to eat them is spread on a piece of toast with some butter. Really good. These anchovies don't need to be diced as finely or spread out with a tiny bit per bite- the flavor is good enough that you can eat a whole mouthful. Definitely worth it. I won't be buying any other anchovies after this.

Sweet Spot
If you are eating anchovies on a cracker or something where you’re not chopping them up and cooking them down with a bunch of other ingredients, these are the ones to get. Nice meaty fillets, not too salty, great savory flavor. Texture is perfect, not mushy, not too many bones. Pricey, but if they’re going to be the star of the dish then they are worth every penny.

Just the right saltiness
Nice large fish. The saltiness we love in anchovies, with a nice savory flavor. I think it's called "Umami". I'll be buying more!
