Great bean, even if a bit unusual
I'm pretty much a coffee roasting newb, but in trying different beans out, I immediately fell in love with these beans for a couple reasons.Taste - a bit different, but very mild as far as not being crazy acidic. I prefer light roasts and this goes down very mellow compared to anything else I've tried.Chaff - What chaff? Its almost non-existent due to how its processed. It also makes a good 'stretch' coffee, ie, mix the beans with *other* beans and it helps cut the acidity down (again... light roasts are my thing)Cons:Lightweight: You have to be REAL careful to not torch these. They are very light, expand a LOT, and roast quickly. Its very easy to overdo it from my limited experience.Taste: I like the taste, but it definitely has its own thing going on and I can see some people disliking it. I call it 'swamp coffee' for a reason. All that being said... they'[re coffee beans. You may or may not like them, so just give them a try.

This was very fresh and harvest date mentioned as recent.
I was very satisfied with this green coffee bean batch of five pounds and it roasted with my hand held ceramic roaster well, lots of flakes came off the beans which made a small mess but this means the beans are fresh and processed correctly. Saved me much cash since I didn't need to by roasted beans which are fifteen dollars a pound from local coffee roaster. I could make lots of cold brew too roasting only 1 cup of green coffee beans for one batch of cold brew. The beans double in size when roasted.

Good coffee!
Not bad at all. Roasts up nice and even. Flavor is good too. Not as "chocolatey" as described but very mellow and smooth. A few sub-par beans, but not to unacceptable levels (I expect a few with all coffees). Overall, a very nice cup even at different roast levels. Going to try this brand's other beans.

It's coffee!
I am still a novice coffee roaster, using the manual whirley-pop method and dabbling with a couple types of electric air popcorn poppers. I have been able to get good results with these beans the last few batches with the whirley-pop now that I have the burner heat setting and timing of the roasting process dialed in better. I am getting to first crack in about 9-10 minutes and to the start of 2nd crack at about 11-12 minutes without adjusting the burner or opening the lid. Last batch was in the neighborhood of Light Vienna and I will probably aim for something slightly lighter next time. There is certainly still room for improvement, but the beans themselves are not what's holding me back :)Four stars because I'm sure there are better beans out there, but these will give you a nice cup if roasted properly. Size is consistent and I do not see any issues with the quality or packaging. For what it's worth I am grinding medium/fine in one of the cheap hand crank burr grinders you can find here on Amazon and doing single cup pour overs.Cheers.

Very smooth and wonderful flavor
This is the first time buying these green Mexican beans from Amazon. I’ve been a home roaster for about two years using a Behmor 200AB plus, and these are close to the best beans I’ve tried. I roasted these to a city/full city roast, and the flavor is rich and absolutely smooth. I get a pound of Kona each year for the holidays and these beans are similar in smoothness and flavor, however, they aren’t quite as good. For a fraction of the price, I am pleasantly surprised. I served this coffee at Thanksgiving and got rave reviews. In summary, these will be my preferred beans going forward.

Best bean
This has made the best cup of coffee of any I've roasted myself. The bag lists a huge amount of information about the growers and recommendations for brewing for a ton of different methods. They obviously care deeply about what they do and it shows in the product.I never see Mexico listed as a source for beans in cafes. After trying this I can't imagine why.

First-Time Home Roaster Impressions
Tired of the high costs of local roasters (plus the ubiquitous tip prompt on Square... Don't get me started), I finally decided to try roasting my own coffee. I've always been fond of Mexican origin beans so I started with this one.The order arrived quickly, and the included infogram from Smokin Beans was full of detail, worthy to put on display for a coffee nerd like me. The beans are of a varying size, but appear to be of consistent quality otherwise. I have not had any issues with the variance in size when roasting or grinding, and even the degree to which they vary is insignificant visually.Being very green to the concept of home roasting, I tried using a pellet smoker for roasting initially. This didn't yield great results, but it was enough to keep me trying. I settled on the very unsophisticated method of a butane burner and a cheap pot and lid. With enough motion throughout the roast, I can get a roast that's 90% as good to me as my local roasters at less than half the cost. The 5lb should last another 4-6 weeks for me, and I will continue to use Smokin Beans based on the quality of these beans.
