I like the Vanilla more than the chocolate, but they're a great alternative for desperate times or celebrations. Yes, their carbs are a bit high, but as an occasional thing (I haven't had one in maybe 4 months), it's nice to have. Also a fantastic alternative to giving my kids a bunch of carbs and real sugar, which makes them dreadfully whiny once they come down from their sugar high. It's also really easy to make a keto frosting out of mascarpone cheese (which has no carbs), and a small amount of fruit and extract for flavoring. I use little ramekin dishes so that the portions are small. My thought is that it's not a meal, it's an occasional treat, and not to get all bent out of shape over the carbs. Also, I recommend using algae oil (you can get it at whole foods), has a higher fat content per teaspoon, and imparts no aftertaste. You can add flavor extracts to the batter or cinnamon and nutmeg and then sprinkle a small amount of erythritol on top then bake and end up with a decent coffee cake. Toss in some orange zest and extract, whatever, go wild! If you make the cake in tiny dishes, you can make multiple flavors.

Delicious Enough to Satisfy My T1D Sweet Cravings without a Blood Sugar Spike!
I was pleasantly surprised by these. I am a type 1 diabetic and am trying to watch my carbs (total and net). These were nearly as good as regular cake mixes! Both flavors were great, although I did add a few things to enhance the flavors (see below for specifics). The best part is that I can have cake without seeing a huge blood sugar spike! (Yes, I had to dose for insulin, but there was no guess work and worry about a huge spike like when I dise for regular sweets. For me, I find that with sweets made from sugar substitutes, I dose for half the amount of total carbs instead of the full amount. But of course we are all different so experiment to find your correct ratio!)For the vanilla mix, I added lemon zest and substituted some fresh squeezed lemon juice in place of some of the water. I used two of the vanilla mixes and did a layer of low carb lemon curd in between the layers and then just frosted with homemade whipped cream (heavy whipping cream whipped with lemon zest, vanilla, Lakanto monkfruit sweetener and a pinch of salt). It was incredible! My husband is usually very picky about sugar fre desserts, but he was licking the plate clean.For the chocolate mix, I added some instant espresso powder to make a mocha flavor, and then made a sugar free mascarpone frosting, so it tasted a bit like tiramisu.

The texture is mildly like cornbread but the taste was good.
I have only made the vanilla cake as cup cakes so far. The taste was good but I need to get used to the texture. As they cooled the rims started to feel hard so I put them in my cup cake container and they ended up soft. My family liked them. I do not feel the price is reasonable for. Unless the price goes down I will make my cakes from scratch. I am new to Keto and using Swerve so I decided to give them a try.

Best low carb cake mix
I purchased this cake mix to give it a test run. I was worried it would taste weird. To my surprise this is really good! Even my husband who is a food snob really loves the taste and texture of the baked product. It is half the amount of a traditional cake mix, but it is just enough for us. I typically makes 12 cupcakes and make my own frosting. I am really pleased with this product and will purchase this again.

needs quality cocoa / chocolate
The vanilla one was good but the chocolate one was too dry and crumbles if you keep some for next day.It still tastes dry even with one added 1 spoon of mayo to mix . I bought another 02 chocolate boxes from another source and thought maybe I over baked the cake but no , the same result . It did not taste or smell chocolaty enough either. It definitely needs better chocolate quality especially considering the price and the ingredients one needs to add. I will not be purchasing the chocolate one anymore.

Fabulous!
I've made both the chocolate and vanilla cakes. Both are wonderful. No gross aftertaste, great flavor. The best is that I'm content with a small slice and the cake lasts for a week. With a regular cake, I'd be shaving off slices all day til it's done....so Swerve cake doesn't trigger the sugar/carb addiction. I love it with whipped cream. Today, will try to make an apple cake with the vanilla.My only great sadness is that these mixes aren't in the stores....EVEN WHOLE FOODS!!!! C'mon Amazon/WF! Don't make me enlarge my carbon footprint by having this delivered when there's a WF just down the street.

Delicious!
I made the vanilla cake mix today, but made a few changes because I was missing the Jack Daniels cake I used to make. I used melted butter instead of oil, 1/3 cup of Jack Daniels instead of the water, and 2 teaspoons Olive Nation butterscotch flavoring with 1 teaspoon vanilla. Then I frosted it with Keto & Co. buttercream frosting to which I added 2 teaspoons butterscotch flavoring and 1 teaspoon vanilla. Oh my, it’s SO good! Now if someone could please come up with sugar-free butterscotch chips.... I’m sure the chocolate will be just as good. I’ll definitely be buying more of these.
