Great value wagyu
I've tried a number of Mishima Reserve's steaks and they're all excellent. But when it comes to value I love what they refer to as "butchers cuts", of which the zabuton is a member. Sometimes called a Denver steak, this cut is well-marbled and beefy while still being lean. It's easy to prepare, and because it's a tender cut it's also forgiving. While quality is important I'm also interested in a brand that aligns with my values and Mishima Reserve ticks that box too. The animals are raised in a humane way, and the packaging is green. The insulation that comes in the box it's shipped in isn't just compostable, it's actually water-soluble (making for a fun science experiment if you've got a 5-year old at home like I do).Wagyu can be intimidating when it comes at a price north of $60/lb so in that sense the zabuton is a good entry level wagyu steak that will not disappoint.
