What is the recommended cleaning process for the tiles?

From my experience pretty much any cleaning solution works well. I use a microfiber mop from turbo mops to mop them clean.

do i need to grout between tiles after laying them to insure moisture/spills do not leak underneath?

I’ve bought a different brand of peel and stick tiles from Home Depot, and I did grout it. The grouting made it look amazing. My issue with the grouting however was that the cleanup was particularly difficult as the haze does not clean off of the vinyl material. If you grout, make sure you do it as clean as possible because even a professional haze remover doesn’t work well on these tiles. The less mess to wipe up, the better

With these tiles I want to use them as wall tiles but do I need to use additional adhesive

the tile itself is not heavy and the glue feels pretty sticky. I believe they will stick to a flat, clean surface, but I used them under a sink. sorry couldn't be more helpful.
