my favorite of the shogun line
This is my favorite knife of the Shogun set (though I don't have the scimitar yet!). Some of the other knives do have some stiff competition and possibly/probably better knives in the same price range or better, but this is one of my favorites (along with the steak knives) and probably the best carving knife I've had. I have several expensive ones over the years but I've given some away, left some at holiday parties on accident, etc.This sucker is sharp and cuts some real thin slices. You could easily make see through tomato slices (In fact I cut a tomato into several dozen slices last night) with it and it works just as well on meat. Looks fantastic, blade was straight, bevel was perfect, handle is uniformly finished, sides are uniformly polished. Although I might not always reach for the Gyuto (it's pretty and a solid knife and I have used it some since I got it don't get me wrong, I just have several and some perform better. ) this slicing knife is better than one I have that is 3x the price. sucker just feels good and works. I was considering getting the carving knife that comes with the fork instead because I really wanted the fork, but I wanted this over the carving knife and I don't really feel the need to have both since a gyuto, boning knife, and slicing knife pretty much has everything meat related covered without the need for a carving knife.

Impressive carver. Comfortable grip, and balanced. Razor sharp AUS-10V Japanese steel, at 10 degrees double edged; literature states 8 to 12 degrees. It's spot on. I was looking for a nice kitchen blade with this exact edge. I may add a few more Shogun series to my cutlery collection. Many of my knives are high quality Japanese steel, or German, some are marine grade, several are antique and passed through generations, a few are handcrafted. This one quickly became a favorite. Well constructed, solid, top quality steel. Beautiful work. 14 inch double edge at 10 degrees, 66 layers, AUS-10V, manufactured in China and of excellent quality and craftmanship. This is versatile slicer and carver; works great with breads too.

I needed a Sushi Knife
I am so glad I bought this beautiful blade. It made sense to me for slicing delicate fish, etc. *(especially working product from my Sous Vide).Super sharp, it glides through with the “granton” reliefs that are ground into the blade to minimize sticking. The extra long blade allows single draw cuts with great precision. The Damascus is simply beautiful, and this blade is just a pleasure to use.The balance is really good for a long blade too. It’s a specialty knife; and I look for any opportunity to pick it up.Perfect for Sushi, Fish, and a lot of other things too. I really use it more than I thought I would, and that makes me really happy.

12" Slicer is the Best I have Owned
I am 73 years old and have sliced plenty of Briskets, Hams and Roasts. The 12" Slicer is the best slicer I have ever used. I bought this knife over 5 years ago and it has remained very sharp with just a little stropping. The knife is strong, thin and stiff which makes it great for slicing large chunks of meat. I highly recommend this knife!!!

It is so pleasing to find the quality is even better than I had hoped
I’m collecting a full set of the DALSTRONG Shogun Series kitchen knives. I’m not made of money so I had to be very picky with my choice. It is so pleasing to find the quality is even better than I had hoped! It is positively amazing what a difference quality blade makes! I especially like the texture of the hammered Damascus steel. It is smooth enough to be kept exceptionally clean but still has enough texture to keep wet foods from sticking when you cut them. The handle is exquisitely made and fits well in my hand. I can feel the exact angle of the blade and control it very easily. There is plenty of heft to balance the blade. A couple of strokes of the steel keeps it frighteningly sharp.This particular blade (12” Slicing / Carving Knife) gets used more than I thought it would. I always wanted a professional carving knife for use on the holiday turkey and ham but I found so many more uses for it! Anything you want precisely sliced is a dream with this blade. It was amazing when making jerky. Watermelon just dares you to make the next slice just that much more perfect than the last. Brisket sandwiches are actually fun to slice. The control I get from this blade is confidence inspiring!Overall, the blade has been an excellent investment and addition to my kitchen! I highly recommend this blade as well as the whole series!

Solid knife, good hand feel, weight
I have the 14" Gladiator and 14" Shogun version of this knife. This review is the Shogun.This is a nice slicer, sharp out of the box. I like to cook large cuts of meat along with collect some cutlery. The longer the slicer the better IMO for things like brisket or home cured bacon.The good:* The fit and finish on this knife was good. G10 finish was nicely done, rivets were flush* No full bolster like the Gladiator version - much improved experience for sharpening* I'm not breaking down bones with the heal, don't need this on the gladiator either* 14" slicer from AUS-10, solid back to the knife, not a lot of wobble considering* different design than just being a AUS-10 version of the gladiator* sharp out of box with even grindThe bad* Damascus looks engraved/pho.

Worth It
Had my mom's knife for 30+ years until the front tip chipped off. Quality was superior in the past and this blade delivered the same and slightly better to this current era. Adjusting from previous 7 inch to current 12 inch carver style knife took less than a week and I already noticed more wrist mobility due to razor sharp and weight distribution. Hoping this holds up for the next coming decades.
