The description states the peel can transfer large and xl pizzas which are up to 18”. how can it do that? wouldn’t the sides of the dough flop over?

I'm not sure about 18" pizzas. But I use it for my 16" pizzas without any issues. I'm sure if your pizzas are crispy amd transferring straight from oven to plate would be fine. But it's up to you if you want to risk it! :)
