Very disappointed to open the package and find that this book was previously used as evidenced by the lines drawn on the pages in the attached picture. I paid $133 for this book and expected it to be NEW as advertised.

For school. Great book

An in depth book covering a wide array of issues regarding purchasing. I would recommend it as a staple in a working chefs library for reference and to help train staff in the proper procedures for food procurement and care after receipt. Great photos for product identification.Worth every penny!
