Q: Planning on using them in a DSLR camera bag, how often do they need to be replaced. Living in moderate-high humid climate?

would depend on how tight your camara bag is I have a 18x18x24 inch telescope bag I use 8 small bags in there I change them every 3 mo just to be sure.

Q: will they work in shoes?

They will absorb moisture although I don't know if it would help odor or not. We use them to keep scuba dive boots dry when stored and it keeps them from getting mildew smell.
