The powder has a strong, inviting aroma, reminding me of that of cumin. Since I like cumin I liked the flavor of the ajwain powder too. It has some natural bitterness, so use it sparingly until you decide on a comfortable for your palate amount of the ajwain powder. I used it as a seasoning when cooking my rice pilaf and stewed chicken dish. It certainly adds a flavorful, warming element to the entire dish. My next step will be to try using it as seasoning ingredient in my chilis too. As a matter of fact, after trying ajwain powder in my dishes, I dare to say I like its bold aroma and flavor better than those of cumin.
