This stuff is expensive, but it works really well.
I've been making my sandwich bread with this and milk and an egg. The bread comes out so wonderfully soft and delicious and it lasts in the refrigerator for a week or more without getting hard or moldy. This additive prevents mold and drying out...and it works. I've also used it in my pizza dough where it seems to help with extensibility.

Am using this for Aimee's banh mi roil recipe
I bought this and the recommended vitamin C for making banh rolls as directed by Aimee's you tube presentation. It works as described and I get good banh mi rolls. I freeze this and the vitamin c when I'm not using them, and hopefully that extends the product life.

Great product!
Was skeptical in trying it but by adding the product, the proofed dough is so much more airy and as a result your baked goods is so much softer and lasts days longer.
