There are no stamps or marking on the unit.

Q: Can you make sparkling water with it?

I could not. I tried premixing a strawberry syrup with water and let it set for two hours in the fridge. It did not work for me.

Q: Can you change the speed it dispenses with how hard you squeeze the handle or is it all the same speed?

Hi riley! Yes.. press softer, it will go out slower… press full… it will go out at full speed

Q: how do I get replacement parts? Such as gaskets and nozzles

It depends on the gasket but there is ACE that carries a lot of general gaskets or ask the manufacturer. As far as nozzles, again, that would need to be from the manufacturer. Although, you might look to cake icing kits as some of those nozzles might fit.
