Paste, Red Miso, 2.2# (K)

Wasn't sure I'd like this, but so glad I bought it. I've used Miso Master and Cold Mountain for years, and this product stands with them. I'll use it for soups, spreads, and all other places I need umami flavoring. You can't go wrong.

My Gosh, this price hike! This was less than 10 dollars two years ago. Three years ago it was about 7 dollars elsewhere. Now it's double the price. Miso itself in their package is not as consistent in terms of color. Some variation is natural, but I think they pack "Shinshu" Aka miso (medium dark) some times, and they pack Haccho-miso type (very dark) sweeter-tasting miso some other time. These are from different regions of Japan and not the same, although they both belong to the "red (aka) miso" category. True Shinshu red miso is not as dark as Haccho miso. The one I am eating right now taste exactly like Haccho miso. Also, one White (shiro, light) miso package of this brand that I bought had dark miso inside the package. Obviously mispackaged. Just be aware of the inconsistency. I hope this is true Japanese miso. Sometimes miso made elsewhere is packaged as "Shinshu" miso. Only miso from the Shinshu area of Japan is Shinshu miso.

This is the best tasting miso I've ever had. It's quite rich but not heavy like some buckwheat misos. Just right.

I mix a tablespoon in with my salad dressing....also in soups and savory dishes. It has a beautiful complex flavor

The product package doesn’t say it’s organic even though it says so on the product page.

Fantastic, and so great for the price! The Miso I find in the store is usually twice the price!

The previous order was much darker in color and flavorful. This current order has mostly salty flavor and much lighter in color. would not buy again.Update.Flavor improved after opening with the color becoming darker. Hence will let it age after opening before use for next order.

It needs self sealing packaging.
