Needs more aging
Somewhat disappointed with my Black Diamond. As a kid in the 1940s, we bought what we referred to as Rat Cheese - a very sharp, dry Cheddar which I always thought was Black Diamond. A few decades ago, we did by Black Diamond and it was much sharper and drier than the one you just shipped. Is that a function of being aged longer? I cannot rate this cheese much more than a regular grocery store sharp cheddar. Steve Hall

Canada Cheddar
Just as I remember it when I was a kid. It even lightly crumbles when sliced. Its taste is a little more "sharp" than most extra sharp commercial cheddars. That determination was made with an A-B taste test.

Black Diamon Grand Reserve Cheddar Cheese - 5lb block.
This cheese is one of the best tasting Cheddars, that I have kept buying over the years. However, when I buy a 5 lb block it crumbles a lot. It used to be less hard and a little creamier in texture. Still delicious, just harder to cut.

Not its finest
Not the oldest or sharpest. This block was apparently stored improperly and lacked moisture, crumbling easily and not slicing smoothly.

This is still good but not as good as boar's head canadian cheddar. I remember black diamond being the best.
