Q: Are these tapered and, if so, what are the dimensions at the thick and thin ends?

They are tapered. The thick end is about 1/2" , and it tapers down to almost zilch. You can easiiy stack a few together to fit wider thicknesses.

Q: Can you double up the shim?

It is very simple to double (or triple or quadruple) these types of shims in many different applications. You can stack them, push them, and cut them to fit. Securing single or stacked shims with heavy duty adhesive, concrete, or hardware (screws), combinations thereof, is a common practice. Beware: each single shim has very nice load-bearing claims on the package, neighborhood of 8k psi. But use some common sense & caution vis a vis the load bearing qualities of shims, where the the bearing strength is only as good as the stability of the setup. With stacked shims, the stability issue becomes paramount.
