Fabulous
The delivery was outstanding just outstanding. Received product before I expected. Next Immediately started to sharpen very old Knives. 50 years plus. My mother has this 12 long blade harden steel she has used and resharpened by hand many times for cutting frozen meat and just about everything else. The Chef's Choice 300 made the blade razor sharp.... I mean sharp. Having sharpened on a bench grinder and wet stone in the past this very special Knife, the 300 just sharpened and then Honed that 12 inch blade to a sharpness that you could reduce the effort of cutting raw or cooked meat fruit vegies and you name it with 50% less wrist force/load. Small knives big knives all took an razor edge using the 300 Chef's Choice. A perfect gift for any and all at Christmas. Simple to use cost effective, and the most important point able to renew knives that the Household Cook likes/loves, and has a long history of Kitchen Service. Food prep and delivery is not just in the Cooking Technics, but also in effective food prep. This is a perfect Thanksgiving for Mom and Dad. My wife's cooking is her hobby (from which I benefit from that hobby) and she has a wonderful near professional level kitchen in our house
Bought this mfg and model based on a specific recommendation from at professional chef. He has one that he uses at home. His company sends theirs out for prof sharpening.At one time he had offered to sharpen my wife's cutlery via his restaurant's service provider. My wife's cooking is her hobby (from which I benefit from that hobby) and she has a wonderful near professional level kitchen in our house. When I asked him if he could take the cutlery to be serviced, he said.. even better than being without her tools for a week or more.... get the Chef's Choice 300.. you will never need an outside service.So... I got one. Verdict.... Wife is amazed. Knives, cleavers, small, large, etc. Sharpe as a razor. She actually cut one of her fingers, something she has not done in years the knives are so sharp.We have used it on about 25 tools thus far. So cannot comment on long term life of the unit.... but 1st impressions are a 5+.Hope this helps your purchase decision. If yes give the review a vote.Jim

Apprehensive but plesently surprised
I read a ton of reviews of various knife sharpeners and have tried a number of them when poor results. After looking into the Chef's Choice 300 sharpener I figured I had a 50/50 shot of the thing producing any results. I have some Chicago Cutlery knives that are farily high quality knives. They are about 7 years old and had not been sharpened until about 6 months ago when I started trying different sharpeners. The first few attempts actually dulled the knives even further. The Chef's Choice provided far superior results to all of the other sharpers that I tried (all other sharpeners were manual). While the knives are not razor sharp by any means they are sufficiently sharp to the point were I no longer recieve complaints when friends come over for dinner.Seeing how well the sharpener worked after following the directions I decided to try a second pass through the sharpening steps to see if I could get a razor sharp edge. To clarify a bit - I touched the blade with my thumb and even applied some light pressure without piercing the skin. I decided to try a softer area of skin so I also tried to lightly press the knife against part of my hand and while it felt sharp it didn't readily pierce the skin there either. Cutting meat at dinner works great without a lot of effort so again - I was happy with the results just not amazed with the results. Anyways, I digress. I tried a number of passes again basically a repeat of the directions but the knife didn't seem to get any sharper than the original results.So amazon had a great deal on this sharpener and it produced good/satisfactory results with very little effort on my behalf.

I just spent over 2 hours working with this supposed knife sharpener! I am not usually so negative about products, but the one I received definitely deserves 1 star!I started by trying to sharpen an old Chicago Cutlery knife. It wasn't even beginning to be sharp after the recommended 20 pulls through stage 1. I ended up going over 100 pulls and it still wasn't very sharp! There was metal coming off but not much of an edge. I was very careful to follow all the instructions, but the blade didn't slide through the slots accurately or smoothly.I used a magnifying glass and looked at the slots. The magnets were recessed and the surrounding plastic was malformed with sharp edges. I took a file and leveled the surfaces of the plastic to the magnets, and then sanded it so they were fairly smooth. These are the surfaces that are supposed to hold the blade at an accurate 20 degree angle on both sides so a good edge is formed. It was so poorly made! I couldn't believe that the supposed great knife sharpening company Chef's Choice made a piece of garbage like this.I continued sharpening and was able to get a fairly smooth draw now, with the magnets holding the blade fairly well. The problem was that the edge still wasn't well formed, so not very sharp. I tried using my good Chef's knife, and it also had a poor edge after many draws through the slots. It had a better edge, but not anywhere close to a good or new edge. I found that when I got an edge, and then moved to the stage 2 slots, the edge actually got worse! I was looking at the edge with magnification and it didn't look good.In my opinion, any company that puts out a poorly made product like the one I received shouldn't be supported.Update: I filled out the Chef's Choice Customer Service form listing the problems I had. I still haven't received any communication from the company. Another negative for this sharpener is that it put scratches all along the surface of my good Chef's knife about 1/2" wide above the edge. This is where it rubs and vibrates against the magnet and malformed plastic. Using a knife sharpener like the Smith's CCKS 2-Step Knife Sharpener has produced a MUCH better knife edge than the Chef's Choice 300. It is cheap, fast, and doesn't leave scratches!
