Very Useful Item for your Frigerator.
Miso Master is an excellent Brand which I usually purchase directly from the Great Eastern Sun. But here I was extremely surprised to see that their products are available here on Amazon, especially when there Miso products are heat sensitive. You don't have to worry about the jug leaking as it is sealed in a leak proof plastic bag before it is packaged in the box for shipping.Given a choice between using Soy Sauce and Tamari, I'll always go for the Tamari which is a high quality Soy Sauce.Now as for this Miso Master Tamari, you will want to adjust how you cook if you use this because this Tamri actually contains Miso in it which is rich in Probiotics.That means that if you add it to a hot pan or to something that is boiling when cooking, you will kill off the probiotics. You're best off waiting till the temperature of the food has dropped enough that the food or liquid is at a simmer and it's cool enough for the probiotics to survive. Otherwise, I would advise you to use regular Tamari or Soy Sauce.EDIT 6/19/20121:I should mention, I use this for marinating meats anywhere from a couple of days to a couple of weeks for amazing flavor. Afterwards, I'll slice the meats thin, then use for stir-fry or other dishes. If you have a spritz bottle, you can fill it with the Miso Tamari and give after you have served your veggies or your rice, you can give them a quick spritz to give them great flavor. You can even use it for Onigiri (Japanese rice balls), form the triangular rice ball, then spritz it evenly, put in oven for a bit to crisp, then wrap as usual with nori and they're ready to eat.I've already used half my jug since I purchased it. Mostly using it for marinating meats.

Great taste, quality and value
Great quality. Extra thick and concentrated, a little goes a long way!Very smooth, Rich and flavorful. This is made in the traditional method of using the “extras” from miso production, as apposed to most other commercial brands which brew Tamari.Def recommend this and the big bottle is a great deal if you use a lot of Tamari!

Unparalleled and concentrated: Essence is the exact, right word for this Miso
Even if you do not use Miso in your kitchen, and do not plan to, this is the stuff that you should try to experience Umami. Use one drop where you would use a teaspoon of regular miso sauce. Adding this to soups (just like salt: to the level that you do not taste the sauce as you should not taste saltiness) creates full-bodied soups (think of this as fish sauce replacement in that case). For regular sushi dipping sauce, this needs to be diluted (juzu juice works the best to result in ponzu sauce) as otherwise it will be overpowering.
