How many of these can i stack? enthoo pro ii has a stack of 4 ... can i stack ... 8?

they simply slide and lock together, stacking 8 will not be very stable though, and you may hay have a heat build up problem.

My giant corsair 1000d case has no cdrom. can i use this rack and install inside my pc right above psu to house (2) 5.25 cdrom drives?

No this is for 3.5" hard drives which are quite a bit smaller than 5.25" CD Rom drives.

Will this fit the P600S?

On the spec page for the P600S one of the stock photos shows two of these installed in the bottom bay, so I'm inclined to say yes. Picture: http://www.phanteks.com/images/product/Eclipse-P600s/Black/PH-EC600PSTG-12.jpg
