This truly is the "Go-To" book for home preserving!
I originally purchased this book as a gift for my daughter, who has been doing a lot of canning, dehydrating & preserving of foods for her family for the last couple years. Once I received the book from Amazon, which is several $$$ cheaper than what the book stores are asking for it, it's heft, alone, intrigued me. It is MUCH more than a book on preserving, canning and recipes. I learned so much "JUST from perusing the pages" (like how to make cheeses!!!) that I kept the book for myself and will now be ordering a 2nd one for my daughter. It truly is "THE BIBLE" for anyone interested in cooking, preserving, or creating their own food stores. Here is an obscure fact I learned which my doctors never revealed to me. For many years I have been unable to eat any product with soy in it. This book explains how in the U.S. traditional soy sauce processing involves the use of "Aspergillis mold" to encourage yeast enzymes to produce that particular flavor...For years I have known that I am highly allergic to aspergillis molds... but would never have thought to make that connection with SOY! I learned that important health fact from this "little book"... well, not exactly little at 444 pages... But it is worth its weight in gold for the information it contains, with recipes from everything from making your own (hard) cider to curing pastrami! You won't be disappointed!

This book does bring new information, and recipes to the home canning/preserving party. It touches on a lot of different methods, and gives a good overview for each. Not all apply to what I do, but it is good to see other ways of preserving and storing foods, and I found references to products with which I was not familiar. I have not found it to be a "stand alone" reference, but it is a great supplemental reference. I am something of a book addict, and like to compare methods and ingredients if I'm trying something new - The better my understanding, the more comfortable I am with experimenting. I have been canning for nearly 40 years, but still want to stay abreast of new developments, and safety guidelines.

LOTS OF DIFFERENT WAY TO DO IT !!
THIS BOOK IS EXCELLENT ! IT COVERS A WIDE ARRAY OF TOPICS AND TELLS ABOUT HOW IT IS DONE AND WHY !ONCE BOOK WITH THE ANSWERS TO ALOT OF QUESTIONS AND "HOW DO I DO THAT? IF U DIDN'T KNOW HOW TO DO IT BEFORE, YOU WILL NOW! READ IT, YOU MAY LEARN SOMETHING !!

Home presserving Bible
I guess it's ok if you really need it. I find it boring and not what I need. just wanted recipes.UPDATE: I went through the book and read some things and I have to say " I made a mistake!!" It does have some good info in it. I would rate it a 4 star and if you are new to canning you might just want this book ( :

Gook information book.
Best book I have found and I have been canning and preserving food for many years in large amounts. I then give away most of it to my kids and elderly people. No complaints and they return my jars clean hoping for a refill.This book will require some seaching through to find information about some methods of food preservation because it is a big Textbook!I bought five of these books; one for me and one for each of my girls for their families. Rave reviews from all!

Very useful book.
Have not tried any of the recipes yet, but as I continue to come up with ideas for preserving my own food, I'm sure this book will come in handy. There are so many ways to preserve food in this book, I'm sure it will come in handy.

All the info you will ever need!
ALL the preserving info you will ever need. On top of "how to" on everything, it also has recipes. Pics of table of contents included, the list goes on and on.

Thoroughly useful, very happy with it!
I love this book, has EVERY kind of food preserving method you could ever think of, plus recipes. Some of the other books i have read were much more technical and complicated. This explains things easily, logically and most importantly in a understandable, useful and easily applied manner. I am delighted with this book and would most definitely buy it again.

Was looking to get started with pressure canning, but found lots of new water bath canning recipes and food dehydrating, too!See this book getting a lot of use over the years to come. It is a the newest member of my permanent cookbook collection.

Does not travel well.
Not as good as I expected. I was disappointed to find that this is much better suited to the American market.
