Classic Professional Chef Textbook - Techniques and Recipes from the CIA
This cooking textbook from the Culinary Institute of America is a great introduction to the cooking techniques that all chefs study and learn at CIA. The book is huge, and it certainly covers just about every subject you can possibly imagine. The book is an easy read with good instructions, good photos, and good recipes. It covers everything from tools to types of cooking, butchering to baking. Worth every penny!
