How do you get this to flatten out?!? It comes rolled up and is pretty stiff

Start to unroll it opposite the direction it comes rolled in first. Next try to unroll corners and place it under feet of a chair or something that has some weight to hold it down to grip the carpet/floor. In a day or so it should be able to place flat under chair.

Can this be trimmed shorter?

It would take a very good, heavy duty knife to cut it in a manner that would look good when done. Regular scissors would not work. It's too stiff and is at least 1/8th of an inch thick. Don't know if they make exacto knives heavy duty enough either.

Is the top of the mat smooth enough to scoot a regular dining chair across? Not a chair with castors.

Yes, I think a dining room chair would have no problem scooting across the surface. It has very little texture.
